Ingredients (serves 8)
- 1.2 kg baby coliban (chat) potatoes, unpeeled, washed, quartered
- 80g butter, chopped
- 1/4 cup chopped fresh chives
Method
- Bring a large saucepan of water to the boil over medium heat. Add the potato and cook for 12 minutes or until just tender. Drain.
- Meanwhile, melt the butter in a small saucepan over low heat.
- Place the potato in a serving dish. Add the butter and chives, and gently toss to coat. Season with salt and pepper. Serve immediately.
Notes
- Time plan tip: Prepare this recipe to the end of step 1 up to 4 hours ahead. Transfer the potato to a large bowl and cover with plastic wrap. Store at room temperature. Continue from step 2 just before serving.
