Vegetarian Recipe - Cheesy Potatoes
- 1 tablespoon butter
- 1 tablespoon oil
- 3 large Sebago potatoes, peeled, thinly sliced
- 1 1/2 cups grated tasty cheese
- Heat butter and oil in a 26cm (base) non-stick frying pan over medium-high heat. Once sizzling, remove pan from heat. Arrange half the potatoes, overlapping slightly, over entire surface of frying pan. Repeat to form 2 layers.
- Sprinkle potatoes with cheese, and salt and pepper. Return frying pan to stovetop over low heat. Cover with a lid or foil. Cook for 15 to 20 minutes or until potatoes are tender.
- Remove lid. Cook for a further 10 minutes. Invert onto a serving plate. Cut into wedges. Serve.
